Carrot cake, baked in chocolate cake with ice cream cones

Carrot cake, carrot cake or carrot cake – no matter what the term for the delicacy you are familiar with, it is guaranteed to be even better prepared than you have come to know before: chocolate and carrots harmonize wonderfully with each other in terms of taste. Wrapped in chocolate cake, a carrot cake tastes particularly great, especially when it rests in the form of small carrots in the dark chocolate cake – that makes the carrot cake not only exceptionally tasty, but also really attractive.

In this recipe we will show you how you can bake the most beautiful carrot cake of the season with chocolate cake, carrot cake and ice cream cones.

Servings: 10-12
Preparation time: 90 min
Baking time: 2 hours + time to cool down
Difficulty level: medium

For this you need:

For the chocolate cake:

  • 10 eggs
  • 360 g of sugar
  • 160 g baking cocoa
  • 360 g of flour
  • 400 g ground hazelnuts
  • 4 teaspoons of baking powder
  • 1 teaspoon salt
  • 600 g soft butter
  • 120 g of grated chocolate

For the carrot cake:

  • 2 eggs
  • 250 g of grated carrots
  • Zest and juice of an orange
  • 125 g of sugar
  • 100 g ground almonds
  • 50 grams of flour
  • 50 g cornstarch
  • 8 g baking powder
  • 60 g of liquid butter

For the ganache:

  • 300 g cream
  • 600 g of chopped chocolate

Also:

  • 5 ice cream cones
  • 5 wooden sticks
  • crumbled biscuits for garnish
  • fresh mint for garnish

That is how it goes:

1. Mix together all the ingredients for the chocolate cake and pour the batter into a greased loaf pan.

2. Mix together all the ingredients for the carrot cake. Then fill five ice cream cones with the carrot cake batter and stick them evenly in the chocolate batter.

Tip: For example, you can bake muffins from the leftover carrot cake batter.

3. Bake the carrot cake in the chocolate cake for 2 hours at 180 ° C top / bottom heat. Then let the cake cool down.

4. For the ganache, heat the cream in a saucepan and melt the chocolate while stirring constantly. Put a wooden skewer in the middle of each carrot cake ice cream cone and then pour the ganache over the cake.

5. Before the ganache solidifies, sprinkle with cookie crumbs; a mixture of crumbled ice cream cones and chopped oreos, but without cream, is best for this. Finally, pull the wooden sticks out of the carrot cake and stick fresh mint on a stick in every hole that remains – your homemade carrot cake in the chocolate cake, which looks quite stately on the whole, is ready …

… but only reveals its true beauty after cutting.

Thanks to the ice cream cones, there are cute little carrots in the chocolate cake – isn’t that a delightful sight? This carrot cake is definitely one of our best cake creations!

By the way: You can also bake other delicacies with ice cream cones, for example this pretty fancy cake.
